BBQ Chicken Salad

BBQ Chicken Salad

For all those that attended our Ladylike Day at UCLA: Who remembers how great the food was from CPK? I found myself in hopes of re-creating their Barbeque chicken salad.

Here is a quick 15 minute easy recipe I found, so we all can re-create our favorite homemade barbeque chicken salad

Ingredients

1 tablespoon olive oil
2 boneless, skinless thin-sliced chicken breasts
Kosher salt and freshly ground black pepper, to taste
6 cups chopped romaine lettuce
1 Roma tomato, diced
3/4 cup canned corn kernels, drained
3/4 cup canned black beans, drained and rinsed
1/4 cup diced red onion
1/4 cup shredded Monterey Jack cheese
1/2 cup shredded cheddar cheese
1/4 cup Ranch dressing
1/4 cup BBQ sauce
1/4 cup tortilla strips

Garlic Lime Shrimp Pasta

Ingredients:

1 pound uncooked large shrimp, peeled and deveined

5 garlic cloves, minced

½ teaspoon salt

¼ to ½ teaspoon cayenne pepper

½ cup butter

3 Tablespoons limejuice

1 Tablespoon minced fresh parsley

Hot Cooked pasta

Directions:

1. In a large skillet, sauté the shrimp, garlic, salt and cayenne pepper in butter until the shrimp turns pink (about 5 minutes).

2. Stir in limejuice and parsley.

3. Serve with pasta and warm buttered Italian bread. Makes 4 servings.

Recipe of the Month: Tex Mex Beef Tacos

Food recipe of the week provided by myrecipes.com

 

Ingredients

Cooking spray
1 cup chopped onion
2 garlic cloves, minced
1 pound ground sirloin
1 cup frozen whole-kernel corn
1/2 cup water
1/4 teaspoon salt
1/8 teaspoon black pepper
1 (15-ounce) can black beans, rinsed and drained
1 (8-ounce) can tomato sauce
1 to 3 drained canned chipotle chiles in adobo sauce, chopped
10 (8-inch) fat-free flour tortillas

 

Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray.

Add onion, garlic, and beef; cook 6 minutes or until browned, stirring to crumble beef.

Stir in corn and next 6 ingredients (corn through chiles).

Bring to a boil; reduce heat, and simmer 10 minutes.

Warm tortillas according to package directions.

Spoon 1/2 cup beef mixture into each tortilla.

Etiquette Tip of the Week: Eating

Eating with your mouth closed is very important, especially when you are around others. Nobody wants to be around somebody who chews loudly with his or her mouths open.

A way to prevent chewing loudly is to take on smaller portions of food, that way it is easier to chew.

How to Manage Stress

1. Meditate- even if it’s for a few minutes a day. Easing your mind can help ease your stress and anxiety level.
2. Breath- when you are stressed, take the time to focus on your breathing. One way to do this is to sit up straight, and close your eyes, and take deep breaths in and out.
3. Reach out- having a support system like your parents, family, or friends is key in reducing your stress levels. When you are stressed it is better to talk about it with somebody rather than keep it all in.
4. Exercise- not only is exercising great for your body it is great in reducing stress.

Cell Phone Etiquette

Sooner or later we will have to make a phone call. Here are some simple tips to consider the next time you make a phone call.

1. Lower your voice when you are taking calls in public, nobody should be able to hear the extent of your conversation.

2. Avoid having personal conversation when others are around.
3. Stay away from having phone conversations when you are already engaged in a face-to-face conversation. It is rude to both the person you are having a face-to-face conversation with, and to the person you are on the phone with.
4. Whenever you go out to dinner or a restaurant put your phone on silent mode so that others around you do not get distracted.
